To make this guide, I took your poll results and paired them with one of the most passionate local threads on the internet about Longmont tacos — the kind with bold opinions, side quests, and a lot of love for adobada, lengua, and horchata.

These aren’t chains, they’re not trying to be fancy (well, some are a little fancy) — they’re just the spots Longmont locals won’t shut up about.

La Panda (11th & Main + South Location)

→ The sleeper pick that multiple locals crowned “best tacos in town, hands down.” Properly cooked meats (especially lengua and barbacoa), serious flavor, and hot salsas that actually bring heat. Don’t sleep on the horchata either.

Tacos Al Molcajete

→ Street-style tacos with a loyal following — and flautas that people will absolutely fight for in the comments. Expect a classic spot with big flavor, plus pozole that keeps popping up in local recs.

Blue Corn Tacos

→ Constantly shouted out for their chicken street tacos and all-around consistency. Great for mixed groups: meat-eaters, pescetarians, and folks who just want a solid taco plate and call it a night.

Summit Tacos

→ Started as a food truck, now one of the community favorites. Simple, delicious street tacos and a crowd that’s been following them since the early days. If you like your tacos with a side of “we’ve been coming here for years,” this is your spot.

Rosa Cantina

→ The place locals bring out-of-town guests when they want to show off. Known for incredible grilled shrimp tacos and a buzzing dining room that fills up fast. Plan ahead or be ready to wait.

Marcos Tacos & Hot Dogs

→ A true Longmont classic in these threads. Opinions about Marcos get… passionate, but there’s no denying the die-hard fans. The adobada keeps coming up, and a lot of locals still call this their go-to comfort taco.

Tacos GTO (Food Truck)

→ One of the most frequently mentioned trucks. Asada, al pastor, or the famous “asada del puerco” — this is a must-try if you’re chasing that perfect late-night taco from a window, not a hostess stand.

Guacamoles (Ken Pratt)

→ Another strong contender that shows up again and again. Great for when you want tacos plus the option to bring along someone who’s going to order a giant combo plate and be thrilled about it.

There were so many other shoutouts — Tacos Vallarta (ahi tacos!), Teocalli/Teocalli Cocina, Los Dos Bros at Home Depot, Taqueria Arandas with the DIY salsa bar — that this honestly could’ve been a Top 20. Consider this Part One of the Longmont taco saga.

Winter Market Returns Dec. 6–7

Longmont’s most festive market of the season is back this weekend, running Dec. 6–7 from 9 a.m.–3 p.m. at the Boulder County Fairgrounds.

It’s one of the biggest local-only holiday markets in Colorado — with 150 farmers, ranchers, makers, and food producers all under one (very cheerful) roof.

  • Farm-fresh winter produce: squash, carrots, apples, onions, radishes, potatoes, microgreens, mushrooms + hothouse tomatoes.

  • Food court: food trucks, pastries, hot chocolate, coffee, cider, cocktails… a.k.a. fuel for holiday shopping.

  • Gifts: all Colorado-made — from fancy jams to soaps, candles, wine, chocolate, and handmade goods.

Many vendors rely on the Winter Market to carry them through the slow season — your purchases directly support small, local businesses.

Grab a tote bag and shop local. It’s the easiest (and tastiest) way to knock out your holiday list.
