On the evening of Thursday, May 7th, Stellar Jay, the rooftop restaurant at Populus Denver – a MICHELIN Key recipient and the country’s first carbon positive hotel, will host a one-night-only chef collaboration with Two Twelve, an acclaimed live-fire restaurant located in Crested Butte. Taking place at Stellar Jay, the special evening will bring the freshest ingredients from the Western Slope to the Mile High City through a collaborative menu from Chefs Blaise Colamarino (Stellar Jay) and Anthony Nelson (Two Twelve). This intimate, four-course, family-style dinner is rooted in seasonality, open-fire cooking, and ingredients sourced from across Colorado. The menu is designed to reflect a meeting of perspectives—combining the vibrant energy of Denver’s dining scene with the ingredient-driven, mountain-town approach that Two Twelve is known for. Guests can expect delicious dishes such as Beet Poke on fresh wonton chips, Grilled Seasonal Fish with charred garlic scape relish, Colorado Elk Rack with huckleberry and morels, and Olive Oil Milk Cake with strawberry rhubarb; along with optional wine pairings from Buckel Family Wine in Gunnison.
